HOW TO MAKE A SUPER EASY & HEALTHY GREEN SOUP

Yet again, I am suffering from a nasty cough and cold. My immune system is shockingly bad and I seem to come down with a cold after a heavy weekend or when I have had a distinct lack of sleep. I’ve stocked up on some multi vitamins recently which I am now taking daily to try and build up my immunity, but one of the best ways to fight of colds is to get the right vitamins in to your body from your food. I’ve been eating loads more vegetables recently and I really wanted to share how to make a healthy green soup which is full of vitamins and goodness, and tastes yummy.

I basically made this up based on another recipe I found, and I just kept adding greens each time I made it, you could probably even add more veg if you want to pack it with your fav green veg, but these are my fav ingredients, and how I make it.

WHAT YOU’LL NEED

Onion (red or white but I always opt for red)

One whole broccoli

2 large handfulls of spinach

2 large handfulls of kale

Potatoes – any will do.

2 Veg stock cube

WHAT TO DO

⚓️ Chop all your onions in to small chunks, and your potatoes in to inch chunks.

⚓️ Chuck in the pan and fry off in some olive oil for a few minutes, stir occasionally.

⚓️ Meanwhile, dissolve your stock cubes in about a litre of boiling water.

⚓️ Once onion is softened add stock water to pan, along with your brocolli.

⚓️ Boil for 5 minutes then add spinach and kale and simmer for a further few minutes.

⚓️ Use one of those large spoons with holes in to sieve out the large chunks of veg in to a food blender, blend, then add the stock water as required to desired consistency.

⚓️ Serve and enjoy.
